Sweet and Tart Cold Coconut Strawberry Soup
1 pound California Giant Strawberries, washed and halved; reserving 4 berries with stems for garnish
2 tablespoons fresh lime juice
¼ cup honey flavored Greek yogurt
½ cup coconut milk
1½ tablespoons honey
4 lime wedges for garnish
Blend all ingredients (except garnishing strawberries and lime wedges) in a blender until smooth.
Chill for at least two hours.
Divide soup among four serving bowls and garnish each with a strawberry and a lime wedge. Serve immediately.
