Deborah’s Tasty and Healthy Breakfast Smoothie

Ingredients:

  • 1 handful of California Giant Strawberries, hulled and quartered
  • 1 avocado, peeled and cubed
  • 1 medium mango, peeled and cubed (about 1 cup)
  • 1 cup coconut milk, unsweetened
  • 6 ounces silken tofu
  • 1 tablespoon ground flax seed
  • ¼ teaspoon stevia or 1 tablespoons honey or to taste for sweetness
  • 2 teaspoons lime juice
  • ½ cup crushed ice

Directions:

  1. Blend everything in blender until smooth. Use more or less ice to thin or thicken smoothie. Pour into glass. If desired, top smoothie with whipped and sweetened tofu.  Place a small strawberry or twisted slice of lime on top of whipped tofu.
