Blackberry Baked Oatmeal

Ingredients:

  • 3 cups oatmeal
  • 2 cups nonfat greek yogurt
  • 3 eggs
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon cardamom
  • 4-8 tablespoons frozen mixed berries
  • 1½ pints California Giant Blackberries
  • 1 tablespoon honey
  • 1 cup milk

Directions:

  1. Preheat oven to 350°F. Combine oatmeal, yogurt, eggs and spices.
  2. Line bottom of pan with frozen mixed berries, try to smash or crumble them into similar sized pieces if they are frozen together. Top frozen berries with oatmeal mixture and then fresh blackberries.
  3. Bake until set in middle (approximately 25 minutes for 3 5×5 inch pans or 45 minutes for an 9×9 inch pan).
  4. Drizzle honey over top immediately before serving and add milk to taste
