Fresh Berry Arugula and Almond Salad

Ingredients:

For the dressing:

  • ¼ cup California Giant Raspberries
  • 1 tablespoon white balsamic or champagne vinegar
  • 6 tablespoons olive or avocado oil
  • 1 tablespoon whole grain mustard
  • 2 tablespoons honey
  • salt and pepper to taste

For the salad:

  • 4-8 ounces baby arugula
  • 6 ounces California Giant Raspberries
  • 6 ounces California Giant Blackberries
  • 3 tablespoons sliced almonds

Directions:

For the dressing:

  1. Add ¼ cup raspberries and vinegar to blender, blend briefly just until smooth. Add remaining ingredients, and pulse until well blended. Taste, add salt and pepper as desired, pulse briefly to mix.
  2. (Note: Be careful not to blend dressing for too long, otherwise it will emulsify and become too thick to drizzle.)

For the salad:

  1. Add arugula to large shallow bowl (or portion onto 4-6 individual plates). Drizzle dressing over arugula, arrange berries on top, sprinkle with sliced almonds, and serve.
