Blackberry Compote Greek Yogurt with Granola

Ingredients:

  • 2 cups of blackberries

  • 1 cup of orange juice

  • 2 ½ teaspoons of corn starch

  • ½ cup of sugar

  • Dash of cinnamon

  • Plain Greek Yogurt

  • Your favorite granola ( I used a pumpkin spice version from Trader Joe's)

Directions:

  1. In a small bowl, mix corn starch and two tablespoons of orange juice; set aside.
  2. Then, sauté blackberries, orange juice, sugar and cinnamon over medium heat. After a few minutes, add corn starch mixture. Simmer until thick.
  3. Top Greek yogurt with blackberry compote, granola, and more fresh berries!
