Sweet, juicy blueberries meet creamy whipped cottage cheese and golden, buttery sourdough in this easy 10-minute toast. Finish with a drizzle of honey and a sprinkle of pepitas for the perfect balance of sweet, creamy, and crunchy.

INGREDIENTS

  • 1 cup California Giant Blueberries
  • 2 medium pieces of sourdough or crusty bread
  • Butter, for grilling
  • ½ cup cottage cheese
  • Honey and pepitas, for serving

DIRECTIONS

      • Add blueberries to a small skillet over medium heat. Allow the blueberries to cook down and release their juices, about 5-10 minutes. Stir and remove from heat.
      • Add butter to one side of bread and toast in a skillet over medium heat until golden.
      • Add cottage cheese to a small blender and pulse until whipped.
      • To make the toast, spread on ¼ cup whipped cottage cheese per each piece of toast. Spoon on warm blueberries and juices. Top with honey and pepitas if desired.
      • TIP: Refrigerate any leftover blueberries – enjoy on toast again, pancakes, toss in a smoothie, or make a PB & J.
