Sparkling Prickly Pear Iced Tea with Muddled Blackberry-Mint
1 cup Prickly Pear Iced Tea or hibiscus tea, chilled
1/2 cup sparkling water or champagne
Small dollop of honey
4 mint leaves per cup
Optional: Passion fruit, Ice
In a large mason jar, mash the blackberries, mint and honey together with a splash of the tea. Muddling helps to infuse the flavors of each ingredient.
Add in the rest of the tea and shake well to incorporate all the flavors. Strain out the mashed fruit and mint as you pour the tea into your two glasses.
Top the drink off with sparkling water or champagne, extra blackberries, mint leaves and as an option - passion fruit and ice, and enjoy!
