English Cucumber Salad with Feta cheese, Pecans and Strawberry Walnut Oil Dressing
3 sliced SUNSET® English cucumbers
8 slices creamy feta cheese, at room temperature
1 cup chopped pecans
3 green onions finely sliced
For the dressing:
1 cup California Giant Strawberries
½ cup rice vinegar
⅓ cup walnut oil (could be replaced with olive oil)
1 teaspoon sea salt
1 teaspoon ground pepper
Clean the cucumbers with running water then cut one of the cucumbers in rounds and the other two in ovals. Place the slices of the cucumber in a plate like forming the petals of a flower. Start with the oval ones and then in the middle place the rounds. Make with the creamy feta cheese small size cheese balls with your hands and place around the salad. Sprinkle the chopped pecans and the green onions.
To prepare the dressing place inside the blender all the ingredients in the list and blend until getting a smooth dressing. Drizzle the dressing on top of the cucumber salad before serving.
