Banana Oatmeal Pancakes with Warm Berry Sauce

Ingredients:

For the pancakes:

  • 2 cups gluten-free oats
  • 2 brown bananas
  • 1¼ cup teff flour
  • 2 eggs plus 2 egg whites
  • pinch of nutmeg
  • drop of vanilla extract

For berry sauce:

  • 2 cups California Giant Strawberries, hulled and quartered
  • 2 cups assortment of California Giant Blackberries, Blueberries and Raspberries
  • 1 cup pineapple juice
  • 2 tablespoons honey

Directions:

For the pancakes:

  1. Puree oats in food processor until they are reduced to a fine powder. Add bananas and blend. Add teff flour, eggs, egg whites, nutmeg, and vanilla, and blend.
  2. Pour onto a frying pan and flip when browned. Top with warm berry sauce before serving.

For the berry sauce:

  1. Heat pineapple juice and honey over medium heat until reduced by half. Add strawberries, followed by remaining berries, and cook until soft.
  2. Serve with pancakes, freeze remainder in small batches.
