Apple Cider and Raspberry-Strawberry Donuts

Enjoy a sweet start to your day with a delicious Apple Cider and Raspberry-Strawberry Donut covered with cinnamon sugar topping!

INGREDIENTS

    For the Donuts:

  • 2 cups all-purpose flour
  • ½ cup coconut sugar
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • Pinch of salt
  • 3 teaspoons cinnamon
  • 1¼ cups apple cider
  • 1 teaspoon apple cider vinegar
  • ⅓ cup apple sauce
  • ¼ cup butter or vegan butter
  • ¼ cup California Giant strawberries
  • ¼ cup California Giant raspberries
  • For the Cinnamon Sugar Topping:

  • Coconut oil spray or any oil spray, reserved
  • ½ cup sugar
  • 2 teaspoons cinnamon

DIRECTIONS

      • Preheat your oven to 400F, and spray the donut pan with coconut oil or butter.
      • In a small mixing bowl, combine the dry ingredients and the spices. In a separate larger mixing bowl whisk all the wet ingredients together - reserve the berries for later. Slowly add the dry ingredients into the wet and stir until combined. Gently fold in the berries. Spoon the batter into the donut tray evenly.
      • Pop into the oven to cook for 9-10 minutes until the donuts are cooked through. Remove from the oven and let cool completely.
      • In a small bowl, mix together the cinnamon and sugar topping (do not add the coconut oil). Set aside.
      • Spray each side of the donuts with any oil spray. Dunk the donuts into the sugar topping and coat the donuts evenly on each side. Repeat until all the donuts are coated evenly.
