A medley of mixed berries combined with citrusy salsa makes for the perfect topping on this summery lunch or dinner. Replace the cod with chicken to make this more kid friendly.

Berry-Citrus Salsa with Grilled Cod

INGREDIENTS

    For the Salsa:

  • 1 cup mixed California Giant berries
  • ½ orange, peeled and cut into small bite-size chunks
  • ¼ shallot, thinly sliced
  • Juice of ½ lime, including zest of lime
  • handful fresh cilantro, roughly chopped
  • sea salt
  • pinch of chili flakes
  • drizzle of olive oil
  • For the Cod:

  • 2 (3 ounce) pieces of fresh cod fillets
  • drizzle of olive oil
  • sea salt

DIRECTIONS

      • To make the salsa, simply mix all the ingredients into a small serving bowl.
      • For the cod, simply add a drizzle of olive oil to each side of the cod and lightly season with sea salt. Warm your grill pan and on medium-high heat, grill the fish for about 3-5 minutes on each side depending on the thickness, or until the fish is flaky and tender. Serve with a large helping of the salsa and enjoy!
