2 cups all purpose flour
1 ½ cups milk
½ cup vegetable oil
3 T sugar
4 tsp baking powder
¼ tsp salt
2 tsp vanilla
1 cup California Giant chopped blackberries
1 cup chopped pecans
1 stick unsalted butter, softened (NOT melted)
⅓ cup honey
Preheat your waffle maker to medium/high
Smash the softened butter and honey together and then mix until well combined. Set aside.
With a hand or stand mixer, beat eggs until fluffy.
Add flour, milk, oil, salt, sugar, and vanilla. Mix on medium speed until well combined.
Stir in blackberries and pecans. Let batter rest for 5 minutes.
Spray your waffle maker with nonstick spray. Pour enough batter to almost cover each quadrant of the waffle maker and then close the lid. Cook for approximately 4 minutes, or until golden brown.
Remove from waffle maker and repeat with rest of batter.
While waffles are still warm , place a dollop of honey butter on top of each and allow to melt.
Drizzle with maple syrup and eat!
