Blackberry Chopped Salad Pizza

Ingredients:

  • 4 Naan flatbreads

For the topping

  • 4 cups chopped romaine lettuce
  • ½ cup sliced pepperoncini peppers
  • 6 oz salumi, sliced thin into 3 inch long strips
  • 4 oz feta cheese, crumbled
  • ½ cup canned chickpeas, drained and rinsed
  • ½ small red onion, sliced as thin as possible
  • 2 T chopped parsley
  • 6 oz blackberries, cut into thirds

For the dressing

  • 1 T pepperoncini juice
  • 2 T red wine vinegar
  • 2 T extra virgin olive oil
  • 1 t dijon mustard
  • 20 turns fresh cracked pepper
  • 1 pinch dried oregano
  • ¼ tsp kosher salt

Directions:

  • Toast the flatbreads in the oven until slightly crisp
  • Whisk together all dressing ingredients
  • Toss together with the romaine lettuce
  • Toss in the remaining topping ingredients (reserving just a bit of each to place on top for garnish!)
  • Cut in half and eat like a large piece of pizza!
  • Want to go without the bread? Double up on the other ingredients and eat as a salad!
