Fresh chopped salad on pizza is a great way to sneak some nutrition into your pizza night! Blackberries bring their natural sweet flavor to contrast the delicious flavors from pepperoncini, salumi, and feta cheese.

Blackberry Chopped Salad Pizza

INGREDIENTS

  • 4 Naan flatbreads
  • For the Topping:

  • 4 cups chopped romaine lettuce
  • ½ cup sliced pepperoncini peppers
  • 6 ounces salumi, sliced thin into 3 inch long strips
  • 4 ounces feta cheese, crumbled
  • ½ cup canned chickpeas, drained and rinsed
  • ½ small red onion, sliced as thin as possible
  • 2 tablespoons chopped parsley
  • 6 ounces California Giant blackberries, cut into thirds
  • For the Dressing:

  • 1 tablespoons pepperoncini juice
  • 2 tablespoons red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 20 turns fresh cracked pepper
  • 1 pinch dried oregano
  • ¼ teaspoon kosher salt

DIRECTIONS

      • Toast the flatbreads in the oven until slightly crisp.
      • Whisk together all dressing ingredients.
      • Toss together with the romaine lettuce.
      • Toss in the remaining topping ingredients (reserving just a bit of each to place on top for garnish!).
      • Cut in half and eat like a large piece of pizza!
      • Want to go without the bread? Double up on the other ingredients and eat as a salad!
