3 cups rolled oats
1 cups cashews, chopped
1/3 cup maple syrup
1/3 cup melted coconut oil
1 T vanilla
¼ cup brown sugar
½ tsp kosher salt
1 cup California Giant blueberries, halved
½ cup California Giant blueberry puree (about 1 cup blueberries)
Preheat oven to 325 degrees.
In a food processor or blender, blend 1 cup blueberries until pureed.
In a large mixing bowl, combine all ingredients except for oats and stir to combine.
Fold in the oats and continue to stir until well coated.
Spread mixture evenly onto 2 baking pans lined with parchment paper.
Bake for 60-70 minutes or until golden brown, stirring every 20 minutes.
Let cool completely and then break apart and store in an airtight container.
