Blueberry & Cashew Granola works great as a topping for yogurt or smoothie bowls in the morning or for a healthy afternoon snack. Blueberry packs in nutrients and sweetness while cashews bring some healthy fats and added protein.

Blueberry & Cashew Granola


  • 3 cups rolled oats
  • 1 cups cashews, chopped
  • ⅓ cup maple syrup
  • ⅓ cup melted coconut oil
  • 1 tablespoon vanilla
  • ¼ cup brown sugar
  • ½ teaspoon kosher salt
  • 1 cup California Giant blueberries, halved
  • ½ cup California Giant blueberry puree (about 1 cup blueberries)


      • Preheat oven to 325 degrees.
      • In a food processor or blender, blend 1 cup blueberries until pureed.
      • In a large mixing bowl, combine all ingredients except for oats and stir to combine.
      • Fold in the oats and continue to stir until well coated.
      • Spread mixture evenly onto 2 baking pans lined with parchment paper.
      • Bake for 60-70 minutes or until golden brown, stirring every 20 minutes.
      • Let cool completely and then break apart and store in an airtight container.
