Blueberry Spiced Jam
Ingredients
3 pounds of washed California Giant Blueberries
6 tbsp low sugar pectin
1/4 cup lemon juice
1 tsp cinnamon
1/2 tsp Nutmeg
3-4 cups xylitol (natural sugar)
Directions
Mash California Giant Blueberries in a pot and add pectin, cinnamon and nutmeg
Bring to a boil flash about 220° stirring constantly to prevent sticking
Reduce heat and stir while adding sugar
Bring to slow boil until berries stick to spoon
Fill jars leaving 1/4 space at the top of jar. Use a conventional pot or pressure cooker to seal jars
