Combine bright veggies with blackberry and blueberry to create this dynamic and delicious salad.

Fatoush Salad


    For the Salad:

  • 1 head Romaine lettuce
  • Handful cherry tomatoes, sliced in half
  • 1/2 cucumber, thinly sliced
  • 2 radishes, thinly sliced
  • Small handful fresh parsley, roughly chopped
  • Small handful fresh mint, roughly chopped
  • Small handful California Giant blueberries
  • Small handful California Giant blackberries
  • Sprinkling of feta cheese
  • 1/2 cup croutons
  • Sea salt
  • For the Dressing:

  • 1 garlic clove, minced
  • 3-4 tbsp olive oil
  • 1 tsp sumac spice, optional but this really makes the dressing if you have it.
  • Juice and zest of 1/2 lemon or 1 tbsp apple cider vinegar
  • 2 teaspoons pomegranate molasses or balsamic vinegar
  • 1 tbsp maple syrup


  • Toss all the salad ingredients into a large bowl. Pour the dressing on top and mix well. Separate into two serving bowls and enjoy!
