This colorful Nourish Bowl is truly customizable and comes together in minutes. The Raspberry Romesco Sauce is the ideal balance of bright, savory, and tart so every bite is full of flavor.

INGREDIENTS

    For the Romesco

  • 2 roasted red bell peppers
  • 1 clove garlic
  • ⅓ cup California Giant Raspberries
  • ½ cup toasted cashews
  • 1 Tbsp white wine vinegar
  • 1 Tbsp olive oil
  • Pinch of paprika
  • Sea salt
  • Plate With:

  • ½ cup shredded cabbage/carrot mixture or coleslaw
  • ½ cup cooked quinoa or any grain
  • ½ avocado
  • 1 cup kale or any greens
  • Top With:

  • Sprinkle of feta
  • Watermelon radish slices
  • Edible flowers
  • Extra California Giant Raspberries

DIRECTIONS

  • For the Romesco:

    Add everything into a food processor and blend till creamy. Pour into a bowl and set aside.
  • To Build the Nourish Bowl:

    Build your nourish bowl in sections by adding in the shredded cabbage, quinoa, avocado and greens. Then add the Romesco sauce in the middle, and top with the extra toppings. When it’s ready to enjoy, mix the Romesco with the rest of the ingredients in the bowl and enjoy it as a dressing.
