Enjoy these healthy, Paleo-friendly Blueberry Waffles for breakfast this week!

Paleo Blueberry Waffles

INGREDIENTS

  • ⅓ cup California Giant blueberries
  • 2 large eggs
  • 1 ripe banana
  • 2 tablespoons coconut flour (or almond flour)
  • ⅛ teaspoon baking soda
  • ⅛ teaspoon vanilla extract

DIRECTIONS

      • Preheat waffle maker and coat with nonstick cooking spray.
      • In a bowl, beat eggs. Add banana to eggs and smash with a fork to incorporate.
      • Add coconut flour, baking soda, vanilla extract and combine.
      • Pour mixture into waffle maker and bake.
