Use fresh strawberries to give some life to your classic boxed cake mix. Topping this beautiful cake with strawberries adds a bright pop of color and a dynamic flavor to a simple white cake mix.

Pantry Strawberry Cake

INGREDIENTS

  • One box of white cake mix, baked according to box directions (we used 6" size cake pans)
  • 2 cups cold heavy whipping cream
  • 1 cup confectioners sugar
  • 1 tsp vanilla
  • 1 lb California Giant strawberries, whole and cut for decorating

DIRECTIONS

      • Bake cake according to the directions. Allow to cool completely before frosting. I like to put my cake in the freezer right before frosting so it's extra cool.
      • To make frosting, combine heavy whipping cream, confectioners sugar, and vanilla in a stand mixer with the whisk attachment. Whisk until stiff peaks form.
      • Decorate cake with frosting. Add cut strawberries between the two cake layers. Then finish by decorating the top of the cake with sliced and whole strawberries. Garnish with flowers.
