PB&J Energy Bites
1 cup Cal Giant strawberries
2 cups rolled oats
2 cups flaked coconut
3/4 cup peanut butter
1/4 cup honey
1/4 cup chia seeds
1/2 cup dark chocolate chips
1/2 teaspoon salt 1/2 teaspoon vanilla
In a food processor, pulse the oats and coconut until ground.
Add strawberries, peanut butter, honey, chia seeds, dark chocolate chips, salt and vanilla.
Pulse until strawberries are cut into smaller pieces.
Roll into balls. Freeze or refrigerate until solid.
Cool for 1 hour
