These Pumpkin + Blackberry Cake Bars are as delicious as they are unique! A blackberry filled cake layer is brilliantly topped with a creamy pumpkin pie flavored layer and baked to make tasty, chewy bars that will be devoured in minutes.

INGREDIENTS

For Pumpkin Pie Layer:

2 eggs
8 oz cream cheese, softened
1 cup pumpkin puree
1 box powdered sugar (1 lb)
2 tablespoon pumpkin spice (or cinnamon)

For Cake Layer:

1 stick butter, melted
1 box vanilla cake
2 eggs
40 California Giant blackberries

DIRECTIONS

- - Preheat oven to 350 degrees.
- - In a large mixing bowl, mix together butter, cake mix, blackberries, and eggs until well incorporated.
- - Spray pan with nonstick spray. Press cake mixture into bottom of pan.
- - In a large mixing bowl, whisk together all pumpkin pie layer ingredients.
- - Pour mixture over top of cake mixture.
- - Bake for 40 minutes or until completely set. Let cool before cutting into bars.
- - Dust with powdered sugar and/or ground cinnamon, if desired.
