This light and fluffy Strawberry Mousse is a refreshing dessert made with sweet California Giant strawberries and airy whipped cream. Served in individual glasses and topped with a dollop of cream and fresh berries, it’s a simple yet elegant treat perfect for any occasion.

INGREDIENTS

  • 1 pound California Giant strawberries, divided
  • 3 tablespoons granulated sugar
  • 1 ½ cups heavy whipping cream
  • ¼ cup confectioners sugar

DIRECTIONS

      • Wash strawberries and set aside 3-4 large strawberries for garnishing the glasses at the end. Hull and quarter the remaining strawberries (about 12 ounces).
      • In the bowl of a food processor, add sliced strawberries (12 ounces) and sugar; puree until smooth. Place in fridge while you make the whipped cream.
      • Add heavy whipping cream to a large metal bowl. Using an electric mixer, mix on medium-high until stiff peaks form. This will take about 4 minutes. Reserve ½ cup of whipped cream for topping the glasses.
      • Set out the glasses on a tray. Remove the strawberry puree from the fridge and add about 1 tablespoon to the bottom of the 6 glasses.
      • Add the remaining strawberry puree to the whipped cream and begin mixing on low speed, gradually increasing to medium-high speed, creating stiff peaks again.
      • Fill the glasses with the strawberry mousse (you can use a piping bag for ease) and top with a dollop of the reserved whipped cream. Refrigerate for at least 1 hour to firm, and garnish with a fresh strawberry slice before serving.
