Berry Fresh Ambrosia Salad

Ingredients:

For the salad:

  • 1 cup fresh strawberries, sliced
  • 1 cup fresh raspberries
  • 1 cup fresh blackberries
  • 1 cup fresh blueberries
  • 1/2 cup canned mandarin oranges
  • 1/4 cup seedless grapes, cut in half
  • 1 cup grated fresh coconut, toasted
  • 1 cup pecans, toasted and barely chopped

For the yogurt dressing:

  • 1 3/4 cup plain Greek yogurt
  • 1/4 cup coconut or agave nectar
  • 1 tsp vanilla extract
  • 1/4 cup canned pineapple, minced
  • 1/4 cup maraschino cherries, minced

Directions:

  1. Place *yogurt dressing in the bottom of a large mixing bowl.
  2. Add the toasted coconut and pecans (reserving a bit for each for garnish) and stir.
  3. Continue to fold in the berries and grapes, and lastly the mandarins.
  4. Continue to fold gently until incorporated.
  5. Cover and chill for at least 2 hours.
  6. Place chilled salad in a serving dish, garnish with the reserved nuts and coconut and enjoy!

*Yogurt dressing:

  1. Whisk yogurt, nectar, and vanilla together until combined.
  2. Fold in minced fruit and chill until ready to use.
