This Summer Berry Pasta Salad is a fresh and colorful blend of California Giant berries, arugula, and creamy mozzarella pearls tossed with a tangy balsamic dressing. Bursting with sweet and savory flavors, it’s a vibrant dish perfect for picnics, barbecues, or refreshing summer meals.

INGREDIENTS

    For The Salad

  • 8 ounces short pasta
  • 1 cup sliced California Giant strawberries
  • 6 ounces California Giant blueberries
  • 6 ounces California Giant blackberries
  • 2 cups packed fresh arugula
  • 1 cup mozzarella pearls
  • ¼ of a medium red onion, thinly sliced
  • For The Dressing

  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons granulated sugar
  • ½ teaspoon dried basil
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper

DIRECTIONS

      • Cook pasta according to package instructions. Set aside to cool completely (rinse under cold water if you need to speed up the process).
      • Make dressing: In a glass jar combine all dressing ingredients. Close tightly with lid and shake well until combined.
      • Assemble salad: Add pasta to a large serving bowl. Add strawberries, blueberries, blackberries, arugula, mozzarella pearls and red onion. Drizzle dressing over everything and gently toss with tongs to combine. Garnish with freshly cracked pepper before serving, if desired.
