Blackberry Baked Oatmeal

A toasty blackberry baked oatmeal that is great for breakfast.

INGREDIENTS

  • 3 cups oatmeal
  • 2 cups nonfat Greek yogurt
  • 3 eggs
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla
  • ½ teaspoon cardamom
  • 12 oz. California Giant blackberries
  • 1 tablespoon honey
  • 1 cup milk

DIRECTIONS

      • Preheat oven to 350°F. Combine oatmeal, yogurt, eggs and spices.
      • Line bottom of the pan with 1/2 cup blackberries (frozen blackberries would work as well). Top with oatmeal mixture and then with remaining blackberries.
      • Bake until set in middle (approximately 25 minutes for 3 5×5 inch pans or 45 minutes for an 9×9 inch pan).
      • Drizzle honey over top immediately before serving and add milk to taste.
