A toasty blackberry baked oatmeal that is great for breakfast.
INGREDIENTS
3 cups oatmeal
2 cups nonfat Greek yogurt
3 eggs
2 teaspoons cinnamon
1 teaspoon vanilla
½ teaspoon cardamom
12 oz. California Giant blackberries
1 tablespoon honey
1 cup milk
DIRECTIONS
Preheat oven to 350°F. Combine oatmeal, yogurt, eggs and spices.
Line bottom of the pan with 1/2 cup blackberries (frozen blackberries would work as well). Top with oatmeal mixture and then with remaining blackberries.
Bake until set in middle (approximately 25 minutes for 3 5×5 inch pans or 45 minutes for an 9×9 inch pan).
Drizzle honey over top immediately before serving and add milk to taste.
