This Cottage Cheese Wrap with Strawberries & Arugula is a fresh, protein-packed option that’s both light and satisfying. The creamy baked wrap pairs perfectly with crisp cucumbers, sweet strawberries, and a tangy balsamic drizzle for a balanced, flavorful bite.

INGREDIENTS

    For The Wrap

  • 1 cup small curd cottage cheese
  • ¼ cup egg whites (or 1 large egg)
  • ¼ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon dried basil
  • For The Filling

  • 3 large California Giant strawberries, sliced
  • Handful arugula (about 1 cup)
  • 2 persian cucumbers, diced
  • Balsamic glaze

DIRECTIONS

      • Preheat oven to 350ºF and line a quarter sheet pan (9x13 pan) with parchment paper or silicone baking mat.
      • In a blender or small food processor, add cottage cheese, egg whites and seasonings. Blend until smooth and pour onto lined sheet pan, spreading in an even layer, leaving about 1” from edge of pan.
      • Bake for 35-40 minutes, or until top is just slightly golden in spots. Remove from oven and allow to cool for 10 minutes on the pan. Once cooled, you can gently peel the wrap away from the parchment paper and lay on a cutting board.
      • Assemble the wrap: lay out a handful of arugula onto the wrap, add sliced strawberries and cucumbers. Drizzle with balsamic glaze. Genly roll up wrap and slice in half with a large sharp knife.
