Fresh strawberry salsa makes for a bright topping on these Blackened Chicken Tacos which also includes other fresh ingredients such as radish, red onion and jalapeno.

Blackened Chicken Tacos with Strawberry Salsa

INGREDIENTS

    For the Chicken:

  • 2 chicken breasts
  • 2 teaspoons chili powder
  • 2 teaspoons paprika
  • 2 teaspoons garlic salt
  • ¼ teaspoon cayenne pepper
  • 2 tablespoons canola oil
  • For the Salsa:

  • 1 cup California Giant strawberries, diced
  • 2 jalapenos, deseeded and diced
  • ¼ cup red onion, diced
  • 1 avocado, diced
  • ½ teaspoon salt
  • 2 teaspoons lime juice
  • For the Tacos:

  • 1 pack corn tortillas
  • 3 radishes, thinly sliced
  • ¼ cup cilantro leaves

DIRECTIONS

      • Preheat oven to 425 degrees.
      • Heat a large skillet over high heat and then add the canola oil.
      • Mix all of the seasoning together and then rub all sides of the chicken.
      • Sear chicken on both sides for 2 minutes each.
      • Put skillet in oven and bake for 10 minutes or until just slightly firm.
      • Remove from the oven and let rest for 5 minutes.
      • Meanwhile, mix together all ingredients for salsa, adding the avocado last and gently tossing.
      • Over an open gas flame on your stove, flip the tortillas back and forth with tongs until lightly charred.
      • Slice the chicken and then fill your tacos with chicken, salsa, and garnish with fresh cilantro leaves and thinly sliced radishes.
