Ingredients: 2 chicken breasts; 2 teaspoons chili powder; 2 teaspoons paprika; 2 teaspoons garlic salt; ¼ teaspoon cayenne pepper; 2 tablespoons canola oil; 1 cup California Giant strawberries, diced; 2 jalapenos, deseeded and diced; ¼ cup red onion, diced; 1 avocado, diced; ½ teaspoon salt; 2 teaspoons lime juice; 1 pack corn tortillas; 3 radishes, thinly sliced; ¼ cup cilantro leaves

Fresh strawberry salsa makes for a bright topping on these Blackened Chicken Tacos which also includes other fresh ingredients such as radish, red onion and jalapeno.

INGREDIENTS

For the Chicken:

2 chicken breasts
2 teaspoons chili powder
2 teaspoons paprika
2 teaspoons garlic salt
¼ teaspoon cayenne pepper
2 tablespoons canola oil

For the Salsa:

1 cup California Giant strawberries, diced
2 jalapenos, deseeded and diced
¼ cup red onion, diced
1 avocado, diced
½ teaspoon salt
2 teaspoons lime juice

For the Tacos:

1 pack corn tortillas
3 radishes, thinly sliced
¼ cup cilantro leaves

DIRECTIONS

- - Preheat oven to 425 degrees.
- - Heat a large skillet over high heat and then add the canola oil.
- - Mix all of the seasoning together and then rub all sides of the chicken.
- - Sear chicken on both sides for 2 minutes each.
- - Put skillet in oven and bake for 10 minutes or until just slightly firm.
- - Remove from the oven and let rest for 5 minutes.
- - Meanwhile, mix together all ingredients for salsa, adding the avocado last and gently tossing.
- - Over an open gas flame on your stove, flip the tortillas back and forth with tongs until lightly charred.
- - Slice the chicken and then fill your tacos with chicken, salsa, and garnish with fresh cilantro leaves and thinly sliced radishes.
