Paleo Blueberry Waffles

Ingredients:

  • 1/3 cup California Giant Blueberries

  • 2 large eggs

  • 1 ripe banana

  • 2 tablespoons coconut flour (or almond flour)

  • 1/8 teaspoon baking soda

  • 1/8 teaspoon vanilla extract 

Directions:

  1. Preheat your waffle maker and coat with a nonstick spray.
  2. In a bowl, beat eggs. Add banana to eggs and smash with a fork to incorporate.
  3. Add coconut flour, baking soda, vanilla extract and combine.
  4. Pour mixture into waffle maker and bake.
