INGREDIENTS

  • 6 oz. California Giant blueberries
  • 1 tbsp. honey
  • 1 tbsp. chia seeds
  • 1 sheet frozen puff pastry, thawed
  • 3 oz. herbed goat cheese, softened
  • 1 egg, beaten, for egg wash

DIRECTIONS

      • Preheat the oven to 375°F and line a baking sheet with parchment paper.
      • Add the blueberries, honey, and chia seeds to a small saucepan over medium heat. Cook for about 5 minutes, stirring and gently mashing the blueberries as they soften, until jammy.
      • Remove the blueberry jam from the heat and let it cool for 5-10 minutes before adding it to the puff pastry. This helps keep the pastry cold so it bakes up extra flaky and crisp.
      • Gently roll out the thawed puff pastry to smooth the seams and slightly enlarge the sheet.
      • Spread the cooled blueberry jam evenly over the puff pastry, leaving a small border around the edges. Crumble or spread the herbed goat cheese evenly over top.
      • Fold the puff pastry in half over the filling and gently press to seal. Slice into strips about 1inch wide.
      • Carefully twist each strip several times and transfer to the prepared baking sheet.
      • Brush the tops with the beaten egg.
      • Bake for 15-20 minutes, or until puffed and deeply golden brown.
      • Let cool for a few minutes before serving.
