Mozzarella, Blackberry Jam, and Arugula Sourdough Panini

This mozzarella, blackberry jam, and arugula sourdough panini is a quick, easy sandwich to make and enjoy for lunch.
INGREDIENTS
For the Jam:
1½ cups California Giant blackberries
½ cup California Giant blueberries
splash of water
2 tablespoons honey or maple syrup
2 tablespoons chia seeds
pinch of sea salt
For the Panini:
2 slices of sourdough
2 large slices of mozzarella
1 handful of arugula
pinch of sea salt
DIRECTIONS
To make the jam, simply add all the ingredients, except the chia seeds, into a small saucepan and stew the berries on medium-high heat for about 5 minutes. Mash the berries with a fork as they soften. Turn off the heat and add in the chia seeds and stir until everything is well combined. The chia seeds will start to thicken as they absorb some of the liquid from the jam, about 3 minutes.
To assemble the panini add a large spread of the blackberry jam to one side of each slice of bread. Then to one piece of bread, layer on 2 slices of cheese and the arugula. Top with the other piece of bread and place in the panini press to grill down for a few minutes until the cheese starts to melt and the top of the bread is golden brown. Cut in half and enjoy!
If you don’t have a panini press, alternatively you could warm the sandwich on a greased saucepan or grill pan, and add something heavy (a heavy plate or bowl) to the top of the sandwich in order for the sandwich to be ‘pressed’. Flip and ‘press’ the other side as well until the cheese starts to melt and the top of the bread is golden brown.
