Elevate your next gathering with these sophisticated, bite-sized skewers that marry Italian-inspired flavors with the brightness of fresh berries. This 30-minute appetizer features a playful mix of al dente Farfalle pasta, creamy mozzarella Ciliegine, and crisp cucumber, all anchored by the bold sweetness of California Giant strawberries and blackberries. Each skewer is finished with a fragrant, folded basil leaf and a rich balsamic glaze drizzle, creating a perfect balance of savory, sweet, and tangy.

INGREDIENTS

  • 24 fresh mozzarella Ciliegine cheese (small mozzarella balls – you’ll need two 8-ounce packages)
  • 24 Farfalle pasta (bowtie pasta)
  • 24 California Giant blackberries (one 6-ounce container)
  • 12 California Giant strawberries, hulled
  • 1 English seedless cucumber (or two persian cucumbers), sliced into ¼ inch rounds
  • Fresh basil, 24 large leaves
  • Balsamic glaze
  • 24 (6”) wooden skewers

DIRECTIONS

      • Prepare pasta according to package directions, cooked to al dente. Tip: Cook a few extra just in case you lose any while making the skewers.
      • Prepare fruit and cucumber as the pasta cooks.
      • Once you’ve drained the pasta, drizzle with a little olive oil and lay in a single layer on a sheet pan. Gather the rest of your ingredients and skewers.
      • For the blackberry skewers: carefully poke down the middle of the blackberry and slide it up near the top. Add bowtie pasta, mozzarella cheese, folded basil leaf, cucumber slice and finish with blackberry. Repeat until you have 12 skewers.
      • For the strawberry skewers: Poke into the middle of the strawberry and slide up the skewer near the top. Add bowtie pasta, mozzarella cheese, folded basil leave and finish with cucumber slice.
      • Before serving, drizzle with balsamic glaze.
