Sparkling Coconut Water Raspberry Lemon-Verbena Mocktail

The fresh taste of sparkling coconut water flavored with the tart, sweet twist of raspberry and lemon verbena make for a delicious mocktail.

INGREDIENTS

  • 2 cups coconut water
  • 1.5 cups sparkling water
  • 20 lemon verbena leaves (if you can’t find this - swap for a large handful of mint leaves and juice of 1/2 lemon or lime)
  • 1 cup California Giant Berries Raspberries
  • Handful California Giant Blueberries, topping
  • Slices of lime

DIRECTIONS

      • In a large mason jar, mash the raspberries into the lemon verbena leaves - this helps to infuse the flavors of the two.
      • Muddle for about 1 to 2 minutes.
      • Now add in the coconut water and lime slices and mix well.
      • Add in the sparkling water.
      • Pour into glasses and top with the blueberries. Enjoy!
