This prickly pear and muddled blackberry iced tea makes for a refreshing beverage. Notes of honey and mint help to conduct a symphony of flavors as you enjoy this drink.

Sparkling Prickly Pear Iced Tea with Muddled Blackberry-Mint


  • 1 cup prickly pear iced tea or hibiscus tea, chilled
  • ½ cup sparkling water or champagne
  • handful of California Giant blackberries
  • small dollop of honey
  • 4 mint leaves per cup
  • optional: passion fruit, ice


      • In a large mason jar, mash the blackberries, mint and honey together with a splash of the tea. Muddling helps to infuse the flavors of each ingredient.
      • Add in the rest of the tea and shake well to incorporate all the flavors. Strain out the mashed fruit and mint as you pour the tea into your two glasses.
      • Top the drink off with sparkling water or champagne, extra blackberries, mint leaves and as an option - passion fruit and ice, and enjoy!
