Spiced Blueberry Lamb Waffle Burger with Strawberry Feta Tzatziki

Rethink your typical burger when you indulge in this Blueberry Lamb Waffle Burger enhanced with a Strawberry Feta Tzatziki.

INGREDIENTS

    For the Burger:

  • 24 oz 85/15% ground lamb
  • Spiced blueberry compote
  • 1 tablespoon minced garlic
  • 1 tablespoon smoked ground paprika
  • 1 tablespoon kosher salt
  • 2 teaspoon ground black pepper
  • 2 oz panko bread crumbs
  • For the Spiced Blueberry Compote:

  • 2 cups whole California Giant blueberries
  • 1 teaspoon ground garam marsala
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 tablespoon lemon juice
  • ½ cup water
  • For the Tzatziki:

  • 1 cup strawberries, small diced
  • 3⁄4 cup 5% greek yogurt
  • 1 tablespoon fresh mint, chopped
  • 2 tablespoon fresh parsley, chopped
  • ¼ cup English cucumber, deseeded, small diced
  • 1 tablespoon lemon juice
  • 2 teaspoon kosher salt
  • ½ cup feta cheese crumbles
  • For the Assembly:

  • 12 each frozen individual Belgian waffles (2 waffles per burger)
  • 2 cups spring mix greens
  • ¼ cup fresh mint leaves, torn
  • ¼ cup fresh parsley leaves
  • 12 each sliced tomatoes (2 slices per burger)
  • ½ each red onion, sliced into thin rings

DIRECTIONS

      • Prep spiced blueberry compote by combining in a saucepan blueberries, garam marsala, cumin, salt, lemon juice and water. Cook over medium heat stirring occasionally for 15 minutes. Consistency should thicken enough to coat the back of a spoon and most of the berries should have popped. Place mixture in refrigerator and chill for 20 minutes.
      • While compote is chilling, prep and make tzatziki sauce. In a bowl, combine yogurt, chopped herbs, feta cheese, cucumber, salt and lemon juice and stir together. Add in strawberries and stir until combined being careful not to breakdown berries too much. Chill in refrigerator until ready to assemble. *At this time preheat oven to 375 degrees for waffles*
      • In a bowl combine together, spring mix greens, mint leaves and parsley leaves. Place in refrigerator until ready to assemble.
      • Prep lamb burgers by combining in a bowl ground lamb, spiced blueberry compote, garlic, paprika, salt, pepper and panko crumbs. Mix with hands until combined. Portion into 6.5 oz portions and round and flatten into 1/2in thick burger patties. Refrigerate patties before cooking for 10 minutes. Preheat grill while chilling patties.
      • Oil the grill and place lamb burger patties on grill to cook for 4-5min. on each side and until internal temperature reaches 160 degrees. Place to the side to rest.
      • While burgers rest, toast waffles in oven by placing waffles on a sheet tray and bake until GBD toasty (golden, brown and delicious).
      • For assembly, start with waffle. Then place some salad mix on waffle. Next add burger patty onto of greens. Slather tzatziki sauce on burger patty. Place more salad mix on top of burger. Place 2 slices of tomato and sliced rings of red onion. Finish with a waffle on top to complete burger.
