Sweet Pea Hummus + Strawberries

Ingredients:

For the hummus

  • 2 jalapenos, deseeded and stems removed
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 10 oz frozen peas, thawed
  • 1 cup canned chickpeas, drained
  • ⅛ cup mint leaves
  • 1 cup parsley leaves
  • 1 clove garlic
  • 2 tsp kosher salt
  • ½ cup extra virgin olive oil

Tools needed

  • Set of measuring cups
  • Blender
  • Microplane

Directions:

  1. Using tongs, char jalapenos over your gas flame or broil them until charred, toss in blender
  2. In a blender, blend all ingredients together until ingredients are smooth, but still has a bit of grit to them
  3. Serve with fresh strawberries and crackers
