Strawberries and goat cheese make a delicious pairing within this Wheat Berry Salad. Wheat berries turn this salad in a hearty meal with lots of flavor and texture.

Wheat Berry Salad

INGREDIENTS

  • ½ cup wheat berries, soaked overnight
  • 3 cups baby kale leaves
  • 1 ½ cups thinly sliced cucumber
  • 10 quartered and marinated artichokes
  • ½ cup crumbled goat cheese
  • 10 strawberries, thinly sliced
  • ½ cup chopped and toasted pecans
  • Vinaigrette Ingredients:

  • 2 T extra virgin olive oil
  • 1 T champagne vinegar
  • ¼ tsp kosher salt
  • ½ tsp honey

DIRECTIONS

      • Cover wheat berries with salted water and let gently simmer for 45 min - 1 hr or until tender, but still chewy. Can also make it in a rice cooker if you have one at home and set it to the brown rice setting. Drain remaining water and set aside.
      • In a small bowl, whisk together the ingredients for the vinaigrette.
      • In a large bowl, toss together the wheat berries, kale, cucumber, artichokes, and strawberries.
      • Divide among bowls and top with chopped pecans and goat cheese.
