Try this flavor-filled Asian Berry Breakfast Bowl that features a strawberry ginger coconut broth, green tea noodles, drunken blueberry sausage, sweet omelet with blackberries and wasabi, and star anise raspberries with sesame seeds.

INGREDIENTS

  • 1 pint California Giant strawberries
  • 4-6 oz ginger root
  • 1 quart coconut water
  • 1 quart water
  • 2 ½ cups “00” flour
  • 1 tablespoon green tea powder
  • 3 eggs
  • ½ teaspoons salt
  • Water as needed
  • 1 cup California Giant blueberries
  • ¼ cup sake
  • 1 tablespoon Chinese 5 spice
  • Salt and pepper
  • 2 cups (1 lb) ground pork
  • 1 dozen eggs
  • 2 tablespoons mirin or soy sauce
  • 1 cup California Giant blackberries, cut into halves
  • ¼ cup wasabi powder
  • Pan spray
  • 1 cup water
  • 1 cup sugar
  • 8-10 star anise pods
  • 1 pint California Giant raspberries
  • 2 tablespoons sesame seeds – toasted
  • 2 tablespoons fresh chopped cilantro
  • 3 California Giant strawberries

DIRECTIONS

  • For the Broth:

      • Rough chop the strawberries (including leaves).
      • Rinse and split the ginger lengthwise.
      • Combine all four ingredients in a pot and bring to a simmer.
      • Cook for at least 20 minutes.
      • Strain reserving the liquid for use.
  • For the Green Tea Noodles:

      • Place 2 cups of flour in a food processor along with the green tea powder and salt.
      • Combine.
      • Crack three eggs on top and pulse to form a dough.
      • Add water if too stiff or flour if too loose.
      • Wrap and rest for 30 minutes.
      • Cut dough into workable portions. Flour and pass through a pasta machine.
      • When thin enough, cut into noodles (number 7 setting recommended).
      • Cook in boiling water before service (store bought noodles can be used to replace these).
  • For the Drunken Blueberry Sausage:

      • Mash the blueberries with a fork.
      • Combine with Sake and spice.
      • Mix in ground pork.
      • Form patties and pan fry to an internal temperature of 165 F.
  • For the Rolled Sweet Omelet with Blackberries and Wasabi:

      • Whisk the eggs with the mirin.
      • Make very thin omelets (traditionally in a square pan).
      • Place on a cutting board.
      • Whisk the wasabi with water to form a loose paste.
      • Line the top of the egg with blackberries and wasabi.
      • Roll the omelet and slice portions as needed.
  • For the Star Anise Raspberries with Sesame:

      • Combine the water, sugar and star anise pods.
      • Bring to a boil and simmer.
      • Reduce the liquid in half. Set aside to cool.
      • Toss the raspberries in the syrup then roll in the sesame seeds.
  • For Assembly:

      • Place warm noodles on the bottom of each bowl.
      • Place sausage patties, sliced omelet, raspberries, and sliced strawberries on top.
      • Pour hot broth over top.
      • Garnish with cilantro.
