Try a tasty twist on the traditional barbecue chicken with this enticing BBQ Blueberry Chicken recipe! Juicy, tender chicken is coated in uniquely delightful BBQ blueberry sauce, delivering the perfect blend of smoky and sweet flavor in every bite.

INGREDIENTS

    For the BBQ Blueberry Sauce:

  • 1 cup California Giant blueberries
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon unsoldered molasses
  • ¼ cup ketchup
  • Pinch of sea salt
  • For the Chicken:

  • 8 pieces of chicken tender pieces
  • 1 tablespoon olive oil
  • Sea salt

DIRECTIONS

      • After you’ve washed and cleaned your chicken, add it into a mixing bowl with a drizzle of olive oil and sea salt. Lay each piece evenly on a parchment paper lined baking sheet and cook for 30 minutes on 350F.
      • In the meantime, prepare the BBQ sauce by adding the blueberries into a saucepan to cook on medium-high heat for 5-8 minutes, or until the blueberries have cooked down and released their juices.
      • Now turn the heat to medium low and stir in the remaining ingredients. Remove from heat and add the BBQ sauce into a blender or food processor. Puree until smooth, and then pour into a mason jar.
      • Once the chicken has cooked, add the chicken into a mixing bowl and pour in some of the BBQ sauce. Evenly coat the chicken in the sauce, serve on a plate, and enjoy!
