Berry Coconut Porridge

Ingredients:

  • 1 cup California Giant blackberries
  • 1 cup California Giant blueberries
  • Juice from 1/2 a lemon
  • 2 tbsp honey
  • 1/4 cup cashews
  • 1/4 cup dates
  • 1 1/2 cups water
  • 1/8 cup coconut flour
  • 1/4 cup shredded coconut

Directions:

  • The night before, combine ingredients for the cashews, dates and water in a glass jar. Let soak overnight. The next morning, pour all ingredients into a blender to combine. Pour mixture into saucepan and heat on low-med heat, whisk until creamy. 

  • For the berry sauce, combine all ingredients in a saucepan over low-med heat until sauce is syrupy. Pour on top of porridge.
