This Berry Spinach Salad is a healthy and delightful combination of fresh baby spinach, sweet berries, creamy goat cheese, and crunchy walnuts. It’s tossed in a homemade yogurt poppy seed dressing, which adds a tangy flavor to the mix. Ready in just 10 minutes, this nutritious and vibrant salad is perfect for a quick and wholesome meal!

INGREDIENTS

    Spinach Salad

  • 5 ounces baby spinach
  • 1 cup sliced California Giant strawberries
  • 1 cup California Giant blueberries
  • 4 ounces goat cheese, crumbled
  • 1 cup walnut halves and pieces
  • ½ cup thinly sliced red onion
  • Yogurt Poppy Seed Dressing (recipe below)
  • Yogurt Poppy Seed Dressing

  • 1/2 cup avocado oil
  • ¼ cup plain 2% Greek yogurt
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 2 teaspoons white granulated sugar
  • 1 tablespoon poppy seeds
  • ⅛ teaspoon fine sea salt

DIRECTIONS

      • In a large bowl add spinach, sliced strawberries, blueberries, crumbled goat cheese, walnuts and red onion.
      • Make dressing: In a tall measuring cup add oil, greek yogurt, apple cider vinegar, honey, sugar, poppy seeds and salt. Whisk together until smooth, taste test before adding more salt or sugar.
      • Assemble salad: Pour desired amount of dressing over ingredients and gently toss to combine.
      • Store any leftover dressing in a closed container in the fridge, use within 1 week.
  • TIP: Salad best served immediately. Dressed spinach salad does not keep well.
