Blackberries and pecans add an exciting texture to this belgian waffle recipe. Whipped honey butter tops the waffles alongside the fresh blackberries and pecans.

Blackberry & Pecan Belgian Waffles with Whipped Honey Butter

INGREDIENTS

  • 2 eggs
  • 2 cups all purpose flour
  • 1½ cups milk
  • ½ cup vegetable oil
  • 3 tablespoons sugar
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons vanilla
  • 1 cup California Giant blackberries, chopped
  • 1 cup chopped pecans
  • 1 stick unsalted butter, softened (NOT melted)
  • ⅓ cup honey
  • Equipment needed:

  • waffle maker
  • nonstick spray

DIRECTIONS

      • Preheat your waffle maker to medium/high.
      • Smash the softened butter and honey together and then mix until well combined. Set aside.
      • With a hand or stand mixer, beat eggs until fluffy.
      • Add flour, milk, oil, salt, sugar, and vanilla. Mix on medium speed until well combined.
      • Stir in blackberries and pecans. Let batter rest for 5 minutes.
      • Spray your waffle maker with nonstick spray. Pour enough batter to almost cover each quadrant of the waffle maker and then close the lid. Cook for approximately 4 minutes, or until golden brown.
      • Remove from waffle maker and repeat with rest of batter.
      • While waffles are still warm, place a dollop of honey butter on top of each and allow to melt.
      • Drizzle with maple syrup and eat!
