Blueberry Carrot Cake Oatmeal

This Blueberry Carrot Cake Oatmeal is irresistibly sweet and has a unique flavor profile created from tastes of carrots, California Giant blueberries, pineapple, and honey.


  • ½ cup carrot, grated
  • ½ cup carrot, grated ½ cup California Giant blueberries
  • 1 ¼ cup almond or coconut milk
  • ½ cup old fashioned rolled oats
  • ¼ cup currants or raisins
  • 1 cinnamon stick or 1 teaspoon cinnamon
  • Dash of nutmeg
  • Dash of all-spice
  • ¼ cup crushed pineapple, chopped
  • 1-2 tablespoon honey
  • Melted white chocolate


      • In a saucepan over medium heat, add all the ingredients into the pan and stir occasionally.
      • Lower the heat to medium-low and cook until the oatmeal is tender and has absorbed the flavor of the other ingredients, about 7-10 minutes.
      • Serve in bowls and top with melted white chocolate drizzle.
