Oven Roasted Blueberries and Honeyed-Hazelnut Clusters Over Goat Cheese Toast

INGREDIENTS

  • 2 slices of sourdough toast (or any toast!)
  • 4 ounces California Giant blueberries
  • small handful of hazelnuts and pistachios, roughly chopped (or any nuts/seeds!)
  • 1 teaspoon honey, or maple/date syrup
  • goat cheese, ricotta, mozzarella, or burrata
  • sea salt, to taste
  • fresh mint, optional

DIRECTIONS

      • Preheat oven to 350F.
      • In a small, parchment paper-lined baking tray, place the blueberries to one side. On the other side, toss in the nuts. Drizzle the nuts with honey and a pinch of sea salt on both the nuts and berries. Roast in the oven for 15-18 minutes until warm and tender.
      • Toast bread and then add a generous smear of cheese on top. Once the berries have cooled slightly, add it onto your toast along with the nut clusters and a few sprigs of mint.
