Caramel-Tahini Fruit Energy Bars

Sweet, energizing, and full of flavor from fresh California Giant blueberries and strawberries, Medjool dates, dark chocolate, and tahini, these Caramel-Tahini Fruit Energy Bars will become your new go-to snack!


  • 1½ tablespoon olive oil
  • 10 Medjool dates, pitted and roughly chopped
  • 1 cup tahini (or any nut butter)
  • ⅓ cup California Giant strawberries, roughly chopped
  • Handful of California Giant blueberries
  • ½ cup mix of toasted pistachios and cashews, roughly chopped
  • 1 cup puffed brown rice or puffed quinoa
  • Pinch of sea salt
  • 3½ oz bar dark chocolate, melted
  • Extra flakey sea salt to top chocolate


      • Using the back of a fork, mash the chopped dates into a paste.
      • In a small saucepan over low heat, warm the olive oil, and add in the date paste, nut butter, blueberries and strawberries. Stir for about 1-2 minutes until combined - careful not to burn the nut butter. Remove from the heat and add in the pistachio, puffed rice, sea salt, and mix well.
      • In a lined baking sheet, pour the batter in and spread evenly until the batter is 1/2 inch thick. Pour the melted chocolate over and sprinkle with sea salt.
      • Pop in the fridge to set for about 30 minutes. Once ready, cut in squares and enjoy!
