Chicken Endive and Radicchio Salad with a Blueberry-Strawberry Vinaigrette

Experience the essence of spring with this Chicken Endive and Radicchio Salad, featuring tender shredded chicken, crisp endive and radicchio paired with creamy avocado, crunchy hemp seeds, and parmesan cheese. Drizzle on a delicious vinaigrette, that blends California Giant strawberries and blueberries with lemon juice, maple syrup, and Greek yogurt for a refreshing burst of flavor!


    For the Salad:

  • 1 small head of radicchio, shredded
  • 3 endives, roughly chopped
  • 1 tablespoon hemp seeds
  • 1 avocado, cubed
  • 1 carrot, thinly sliced
  • 1 1/2 cup chicken, shredded
  • 1/4 cup Parmesan cheese
  • For the Dressing:

  • 1/2 cup California Giant strawberries
  • 1/2 cup California Giant blueberries
  • 2 tablespoon maple syrup
  • 2 tablespoon lemon juice or apple cider vinegar
  • 2 tablespoon extra virgin olive oil
  • 1 large scoop of greek yogurt
  • Pinch of sea salt


      • Add all the salad ingredients into a large mixing bowl and toss together.
      • Make the dressing by adding all the ingredients into a blender and blend until creamy.
      • Pour the dressing on the salad and toss once more. Serve and enjoy!
