INGREDIENTS

    For the Pork Tenderloin:

  • 3 slices of pork tenderloin, cut into 1” thick pieces
  • 1 tbsp olive oil
  • Sea salt
  • For the Berry Wine Sauce:

  • 1/2 cup California Giant blackberries
  • 1/2 cup California Giant blueberries
  • 1 sprig of fresh rosemary
  • 1 tablespoon coconut sugar or brown sugar
  • 1/2 cup red wine
  • Pinch of sea salt

DIRECTIONS

      • Start by preheating your oven to 400F. On a parchment paper lined baking sheet, lay down the sliced pork loin pieces and rub with the olive oil and sea salt.
      • Bake for 30-35 minutes, until tender (the center can be a little pink if you like).
      • In the meantime, make the sauce by adding all the ingredients into a sauce pan and cook on medium heat until the sauce reduces down in half and becomes thick - about 15 minutes. Stir often.
