Chicken Sausage with Blueberry Salsa and Avocado


    For the chicken sausage:

  • 2 Avocados from Peru, sliced
  • 8 chicken sausages (or hot dogs)
  • 8 hot dog buns
  • Blueberry Salsa
  • 1/2 red onion
  • For the blueberry salsa:

  • 1 Avocado from Peru, diced
  • 1 ear of corn, charred, kernels cut off
  • 1/2 cup California Giant blueberries
  • 4 tsp lime juice
  • Zest of 1/2 lime
  • 1/2 tsp salt


      • In a large bowl, combine salsa ingredients. Refrigerate until ready to use.
      • Cook sausage according to package directions. Place in bun. Top with blueberry salsa, onion, and Avocados from Peru.
