Fresh Salad with Grilled Strawberries and Celery, Berries, Burrata with a Citrus Vinaigrette

A fresh new year’s salad topped with strawberries, celery, berries, and burrata with a citrus vinaigrette.
INGREDIENTS
For the Salad:
4 sticks of Dandy Celery, divided
4 California Giant strawberries, cut in half
Handful of California Giant blackberries
California Giant blueberries
California Giant raspberries
1 medium burrata ball, cut in half
3 cups arugula
Handful of hemp seeds
For the Dressing:
3 tablespoons orange juice
2 tablespoons lemon juice
1½ tablespoons Dijon mustard
1 tablespoon honey or maple syrup
3 tablespoons cup olive oil
Pinch of sea salt
DIRECTIONS
Using a grill pan or on the grill, cook 1/2 of the celery sticks and the strawberries until soft with grill marks on either side.
While it grills, mix all the dressing ingredients in a jar.
Now cut the grilled and raw celery sticks on an angle into ¼” pieces. Toss all the salad ingredients into a mixing bowl along with the salad dressing. Mix well. Plate and enjoy!
