Grilled Corn and Berry Salad with Fresh Herb Dressing

Blueberries and corn create the perfect combination of flavors within this fresh salad with herb dressing.


    For the salad:

  • 2 cornhusks, grilled and with kernels removed
  • Handful arugula
  • ¼ cup California Giant blueberries
  • Sprinkling of goat cheese
  • Pinch of sea salt
  • For the berry-herb dressing:

  • ¼ cup California Giant blackberries
  • 1 cup fresh mint and basil
  • 3 tablespoon olive oil
  • 1 teaspoon lemon juice
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Splash of water


      • Start by making the dressing. Add all the ingredients into a food processor or blender and mix until the herbs and berries have been chopped and combined. Pour in a cup and set aside.
      • Add all the salad ingredients into a large bowl and top with the dressing. Mix well. Serve and enjoy!
